蒸留はサンフランシスコ・ワールドスピリッツ•コンペティション2024で4つのダブルゴールドメダルなど他国際コンテストに於いて多数受賞歴のある今、注目の野沢温泉蒸留所に依頼致しました。

日本の伝統食材である「蕎麦」は、古くから食文化の一部として親しまれてきました。その中でも、香ばしい風味を持つ「蕎麦茶」に着目し、ジンのボタニカルに取り入れ、スパイスを組み込みながら今までにない新しい味わいのレイヤーを持つジンを私たちは目指しました。

蕎麦茶と言えば信州、信州と言えばやはり野沢温泉蒸留所が今回もパートナーです。前回のFUKINOTO GINは非常に好評であっという間に完売しました。野沢温泉蒸留所のサム氏の蒸留テクニックは非常に高度で今回も細かい調整して味わいを整えて頂きました。

蕎麦茶の濃度が濃いうえに、ボタニカル濃度が濃いと白濁もするので何度も試行錯誤の上でどこにもない蕎麦茶を使ったオリジナルのクラフトジンが完成しました。蕎麦茶も幾種類もあり、相性を調べてベストのチョイスをしました。シナモン、クローブなどのスパイス類は蕎麦茶と相性が良く、蒸留して一体となるとナッツやバニラを思わせる香りと、ボタニカルの華やかさが重なり合い、口に含むとまろやかな優しさが広がります。アクセントに京都の入り番茶、トンカ豆がいい仕事をしています。

【テイスティングノート】

■Aroma：ジュニパーとコリアンダーの華やかさと焙煎された蕎麦の香ばしさが一気に広がる。トンカビーンズ由来のバニラやアーモンド、シナモンの甘く滑らかな香りが奥行きを生む。

■Taste：丸みのある優しい口当たり。蕎麦の穀物感がベースとなり、甘くナッティなニュアンスが包み込む。仄かなフローラルさが全体を軽やかにまとめる。

■After：スパイスと香ばしさが調和しながら、バニラや蜂蜜を思わせる柔らかな甘みがゆっくりと続く。

A one-of-a-kind craft gin that harmonizes the roasted aroma of Shinshu buckwheat tea with the floral elegance of botanicals.

The “Buckwheat Gin Natural & Nutty Limited Edition 2025” (¥5,610 tax included) will be available in limited quantities starting Friday, October 24, 2025, at Mixology Online Store and Mixology Boutique (Hibiya OKUROJI).

Distillation was entrusted to Nozawa Onsen Distillery, a rising star that has earned multiple international awards, including four Double Gold Medals at the San Francisco World Spirits Competition 2024.

Concept

“Buckwheat” has long been an integral part of Japanese culinary tradition.
Among its forms, buckwheat tea (soba-cha) offers a rich, toasty aroma.
By incorporating this as a botanical and layering it with spices, we set out to create a gin that expresses a new, multi-dimensional taste experience.

When it comes to buckwheat tea, Shinshu naturally comes to mind — and so, Nozawa Onsen Distillery once again became our partner.
Our previous collaboration, FUKINOTO GIN, sold out quickly thanks to its popularity.
Under the delicate distillation skills of Mr. Sam at Nozawa Onsen Distillery, this new release was refined through meticulous adjustments.

Because the concentration of both buckwheat tea and botanicals is quite high, we went through numerous trials to prevent cloudiness and achieve balance.
After testing several varieties of buckwheat tea for compatibility, we selected the ideal one.
Spices such as cinnamon and clove blend beautifully with buckwheat, and when distilled together, they yield aromas reminiscent of nuts and vanilla, layered with botanical brightness and a soft, rounded mouthfeel.
Accents of Kyoto-style roasted bancha and tonka bean complete the composition with finesse.

Tasting Notes

Aroma:
A burst of juniper and coriander brightness layered with roasted buckwheat aroma.
Sweet, smooth notes of vanilla, almond, and cinnamon derived from tonka beans add depth and warmth.

Taste:
A mellow, gentle mouthfeel.
The grainy richness of buckwheat forms the base, enveloped by sweet, nutty nuances.
Subtle floral tones bring a light finish.

Aftertaste:
Spice and roasted aromas intertwine gracefully, followed by lingering soft sweetness reminiscent of vanilla and honey.

Simple: Neat, on the rocks, with soda, or with buckwheat tea
Cocktails: Excellent in a Negroni, as a small blend in bitter cocktails, or paired with cacao-based drinks.
